We specialize in growing and shipping high quality Organic Certified Seed potatoes which have been stored to extend dormancy and thereby enhance vigor, performance and yields. It's easy to break dormancy by placing tubers at room temperature (70-75oF) for a few days. The eyes are present, it's just hard to see them before tubers have sprouted. Full details are in the 'Organic Potato Growing Guide' sent with your order. There's no reason for the Yukon Gold to have been soft this time of year.
