Hi Anne, Thanks for your Review! We recommend first warming the Organic seed tubers up at room temperature until the sprouts start to emerge from the eyes. Once you see the sprouts emerging from the eyes you have your proof that the tubers have broken dormancy and are ready to grow and emerge from the ground fast. Caleb
