Hi Paul, thanks for your Review. By design, we store our Organic Maine Certified Seed Potatoes for peak condition and the youngest physiological age possible. This gives your seed tubers the most vigor and that results in the highest possible yields. Simply placing seed tubers in a warm (70-75oF) room for a week or ten days will cause them to break dormancy, start growing and become ready to plant. Jim
