With regards to the recipe, as a general rule if you use 500g of dry ingredients you need approx. 250g of wet ingredients. If your eggs weigh 250g then you should not need any water, if not you will only need a small amount of water, maybe a tablespoon or so. I'm afraid it is a little trial and error to get it perfect.
