Hi Patricia, Thanks for your and for posting your Reviews. A lot of modern potatoes have very smooth surfaces. The eyes are there but since we maintain our tubers in a dormant state to preserve vigor, the eyes will be hard to identify prior to sprouts emerging. A good idea is to break the seed tubers out of dormancy in the dark (in their bags) at room temp (70-75oF) 7-10 days ahead of planting. Then the visibly sprouted tubers will be easy to cut into seed piece. Additional details and prep options are contained in the 'Organic Potato Growing Guide' sent with your order. Happy Gardening!
