Hi Melinda, Thank you for your order and for your Review! Your order should have contained our "Organic Potato Growing Guide" and that guide is complete and will answer many of your questions. We just finished harvesting your Certified Seed Potatoes. Essentially, the tubers must complete their short dormancy period before they will sprout and grow. To facilitate breaking dormancy, keep tubers at room temp. Once you see the tiniest of sprouts beginning to emerge from a tuber's eye, that is indication the tuber has broken dormancy and is safe to plant.
