An elegant, nutty, oxidative Arbois-style Vin Jaune, aged for 6 years and 3 months prior to release. It pays to decant this delicious, contemplative wine from its cramped 62cl 'clavelin' bottle and serve at room temperature (14 to 16 degrees C.) with a generous slice of Comté and a handful of walnuts. No Jura tasting worth its name would be complete without the region's famous speciality, Vin Jaune, which is made from pure Savagnin that is raised in barrel under a veil of yeast for a minimum 6 years and 3 months before being transferred into a distinctive 62 centilitre bottle known as a 'Clavelin'. The finished wine has a powerful, yeasty, dry and persistent palate with complex characteristics of nuts and minerals. It makes a terrific partner to strong, hard cheeses and will age indefinitely if properly cellared.(PS: given its style, it will also keep for a month once open).
