Bruno Colin’s Hautes Côtes de Beaune Blanc comes from the top slopes of the largely south-east and east-facing hills of the Côte de Beaune. This has a classic Chardonnay nose of citrus and white peach set against a mineral streak typical of the Domaine style. Its characteristic acidity remains fresh, enlivening the aromas that follow through to the palate. Covering an area of some 29 villages, the appellation of Hautes Côtes de Beaune dates from 1961 and is predominantly planted to Pinot Noir, with just 20% devoted to Chardonnay. Perched some 290-485m above sea level, between 100-200m higher than the Côte de Beaune appellation, vines are harvested on average around a week later. Soils remain chalky with some sandstone and clay, some marl and limestone.In warm vintages and as temperatures warm, the increased altitude has helped vines retain freshness. In vintages where there has been a long warm summer, ripening has brought such vines to full maturity, enhancing their vivacity.Serve with: Roast chicken, sole meunière or cauliflower cheese.
