Hervé Bizeul's 'Clos des Fées' rouge bottling is sourced from selected plots of very old Carignan and Grenache bush vines (aged 70 to 100 years old) from limestone-clay hillsides, plus younger Syrah and Mourvèdre. Blended from equal parts Syrah, Mourvèdre, Grenache Noir and Carignan Noir, it is aged for 18 months in new barrels. Brightly dark-fruited, it shows its Syrah dominance in the blend and drinks best after several years in bottle. Ideal with slow-braised stews or grillades. . Miniscule parcels of the best old-vine fruit from limestone-clay soils are carefully looked after in the vineyard with extensive bud and shoot removal, green harvesting and appropriate leaf-thinning. Each component is picked according to phenolic ripeness by parcel and soil type necessitating multiple vineyard passes. Rich concentrated ripe blackcurrant and black cherry fruit aromas are lifted by a distinct savoury, meaty and garrigue herb edge with a little vanilla (from oak). Concentrated and mouth-filling in flavour with a little oak underlining the fruit. With the elegance of the vintage, it has a good freshness and vivacity with fondant tannins and lovely length so best decanted in its youth. Hervé suggests serving it with duck breast (cooked rare), a well-hung côte de boeuf with confit shallots, venison stew or slow-braised wild boar. .
