Not to be overlooked among the Jasper Hill wines, the \'Occam\'s Razor\' Shiraz is an outstanding bargain and has the signature \'Cambrian clay\' complexity and pure expression of fruit that all of the Jasper Hill wines exhibit. With oodles of ripe black berry and cherry fruit over notes of spices and scorched earth, the \'Occam\'s Razor\' Shiraz represents a veritable bargain in this stellar line-up of \'natural\' wines. Occam\'s Razor is the wine label Emily McNally (nee Laughton), named after 14th century theologian and philosopher William of Ockham\'s views of \'less is more\' – applicable in winemaking as minimal intervention - organic, biodynamic and un-irrigated. Ungrafted vines grow in granite soils (which differ from other Jasper Hill wines, grown on basalt), which impart a bit more perfume to the wine. It shows prominent savoury characters and bold fruitiness with elegant raspberry, cola and dark chocolate characters. Delicious now and will further develop complexity with bottle age.
