There are many reasons why this can happen with sourdough. It can be because the mixture is a little too wet and needs to flour water ratio tweaked or if strong or bread flour are used rather than plain and it can also be environmental. These are live cultures and do sometimes need a little teak as they are all individual in their own way. We cannot help however if you do not contact us.

You contacted us stating you had a problem with your scoby. We advised why (because it was being brewed in a container with a closed lid and this is not suitable for kombucha brewing as it causes mold as the process needs oxygen to complete). You told us we were wrong and you had successfully brewed this way for years and blamed our product.
There is not one guide to brewing kombucha that recommends brewing in a sealed vessel, we all state that the jar must be open with a brew cloth placed over the top.
Whilst you are perfectly within your rights to brew however you please, the consequences of such actions are your own and it is not our responsibility to fix it for you.
I am sorry that you find this patronising.

You send us two pictures of two scobys, one was doing really well and brewing happily. The other was in an inaapropriate jar with a sealed lid which is not a suitable environment for kombucha brewing as it requires oxygen to brew. We advised you of this, i am sorry that you found this patronising.
As someone who has worked in this field for 2 decades i found being told i didn't know what i was talking about and that i did not know how to brew essentially a tad patronising and insulting that you then expected us to fix the issue for you.
KOMBUCHA CANNOT BE BREWED AS A CLOSED BREW, mold will always be the result.
If you had not been so indignant and entitled we likley would have replaced the scoby for you anyway but as you had just insulted my knowledge i chose not to offer a goodwill gesture to you. If you are trying to get a company to give you somethinmg for free because you havn't followed the instructions its generally a good idea to be nice to them rather than insult them and their products, just a hint.

This is a defamatory statement and i hope that you have some evidence of this abuse as i have read through all of the correspondence between ourselves and i can confirm that the abuse came from you not us.
You contacted us stating the starter was dead and demanding a refund. We asked for pictures and you send us pictures of a perfectly normal and healthy looking starter. Then you became abusive. You lied about how many times you had fed it, you lied about how you were feeding it, you were not honest with us from the start. You then continued your mistruths stating that you had purchased a significant amount of products from us over the years when it was in fact your first ever purchase. When your mistruths were called out and evidence presented to you that proved what you were saying was not true you doubled down and became more abusive.
We pride ourselves in our customer service and have been going out of our way to help customers ferment since 2009. We have won awards and recognition for our customer service but we cannot help if you are not honest with us and we will not tolerate being belittled or mocked when we are trying to help you.

We replied politley and quickly to every message you sent. Stating that we are abusive is defamatory and i hope that you have some evidence of this as i cannot see any abuse from anyone but you and there are legal consiquences to such statements.
you stated in your first email that you were an expert baker that had been baking sourdough for over 20 years (not sure why you would actually need our help then) then you stated that the starter was dead and arrived dead. We asked to see a photo and you sent us a picture of a perfectly healthy starter. For someone with 20 years of experience you don't seem to know very much at all about sourdough,. But you are determined to be right at all costs. You then complained about the heat when we sent out the original starter and that you were very very unhappy that we had put it in the post when the weather was warm (but you also complained that it took too long to arrive). You insulted our founder and belittled her talent.
You demanded a refund and only a refund were belittling and condecending to our staff who all have far more experience than yourself. I am always happy to help with cultures but i am not going to be insulted while doing it.
As i said in several of our emails, i am very sorry that you did not like the starter, there are many different ways to keep and use a sourdough starter and i am sorry if you did not like ours but there is absolutley no need to speak to staff in that way.
You then tried to claim that you had been a loyal customer of many years until we pointed out that you had never purchased before and then you claimed you had been buying from us regularly for years on Amazon (until we pointed out that we do not sell on Amazon and had not for many years).
We offered advice, you insulted us. We offered a replacement, you insulted us.
