Hi William, In order to promote vigor and highest yields we manage our Organic Seed Potatoes for maximum dormancy. In the 'Organic Potato Growing Guide' sent with your order, we suggest that you warm up the seed tubers at room temperature for 3-7 days ahead of planting.
