The secret to Acquerello’s coveted status as the ‘Rolls-Royce’ of rice is the aging process it undergoes. The freshly harvested grains are aged for 1-3 years in controlled conditions. The aging improves the overall consistency of the rice, enabling it to absorb more liquid during cooking whilst retaining its structure.
